When a beloved 60-year-old neighborhood Mexican restaurant closes its doors, the standard reaction among locals is to irrationally hate on whatever opens in its place. But what if the thing that comes next is an honest revival of said establishment, a younger and fresher version of the original? Such is the case with El Chavo, which reopened in early January as a modern pop-up collaboration between Ceviche Project chef Octavio Olivas, Scarpetta chef Freddy Vargas and Cocktail

As you’ve doubtless heard by now, El Chavo has changed hands, with the former owners selling off the place and walking away last fall. For now, the in-limbo spot is still up and running though, doing a raw bar and taco pop-up series with three of the best names in the business. And along the way, the temporary experience has managed to give the space a (minor) facelift as well. The #elchavoproject was a restaurant takeover at El Chavo Restaurant in Silverlake, curated by @TheMostFamousArtist aka Matty Mo. El Chavo is a colorful neighborhood joint offering handmade Mexican classics & a robust mezcal & tequila menu. It has currently been taken over by The Ceviche Project and the Cocktail Academy.
